Forget boring snacks and say hello to this delicious and easy-to-make Banana Date Bark. Made with fresh bananas, dates, chocolate chips, and Purely Elizabeth Peanut Butter Cookie Granola, it's the perfect snack (or dessert) for those "I want something sweet that won't leave me feeling sluggish" moments.

Ingredients

3 bananas, thinly sliced

20 medjool dates, pits removed

⅓ cup natural creamy peanut butter

½ cup Purely Elizabeth Peanut Butter Cookie Granola

1 cup dark chocolate chips

1 tbsp coconut oil

Flaky sea salt

Directions: 

  1. Line a pan with parchment paper and add an even layer of banana slices.

  2. Cut the dates in half and flatten. Lay down an even layer of dates over the banana slices.
  3. Drizzle with peanut butter and use a spatula to spread it as evenly as possible. Sprinkle an even layer of Purely Elizabeth Peanut Butter Cookie Granola over the top.
  4. Add the chocolate chips and oil to a microwave-safe dish and cook for 30 seconds. Stir until smooth and drizzle evenly over the granola.
  5. Freeze for 2-3 hours before cutting into pieces and serving. Store leftover bark in an airtight container in the freezer.
