Line a pan with parchment paper and add an even layer of banana slices.
- Cut the dates in half and flatten. Lay down an even layer of dates over the banana slices.
- Drizzle with peanut butter and use a spatula to spread it as evenly as possible. Sprinkle an even layer of Purely Elizabeth Peanut Butter Cookie Granola over the top.
- Add the chocolate chips and oil to a microwave-safe dish and cook for 30 seconds. Stir until smooth and drizzle evenly over the granola.
- Freeze for 2-3 hours before cutting into pieces and serving. Store leftover bark in an airtight container in the freezer.
