In a large mixing bowl, add the ground turkey, green onion, curry paste, garlic, basil, jalapeno, ginger, curry and salt.
- Use your hands to combine and form into 4 evenly sized patties. Chill while you make the slaw and sauce.
- Combine the slaw ingredients together in a bowl until evenly coated. Set aside.
- In another bowl, whisk together the peanut sauce ingredients adding only ⅓ cup water and whisk until smooth. If you prefer a thinner sauce, slowly add additional water.
- Heat a skillet over medium heat. Add the olive oil once hot. Cook patties for 4-5 minutes on each side until the temperature reaches 165F.

Assemble the burgers: Add a thick layer of peanut sauce to the bottom bun, top with cucumber ribbons, patty, slaw and top bun. Serve immediately and enjoy!
