We believe that healthy eating doesn't have to be boring, which is why we've taken a traditional turkey burger and created something more elevated (and even more delicious). Featuring fresh spices and herbs, a zesty slaw, and flavorful peanut sauce, get ready to add this recipe to your weekly rotation.

Ingredients

Turkey Burger

1 lbs lean ground turkey

1 green onion, thinly sliced

1 tsp thai red curry paste

1 clove garlic, minced

2 tbsp basil, chopped

1 jalapeno, seeded and diced

1 tsp ground ginger

1 tsp ground curry

¾ tsp salt

1 tbsp olive oil

4 buns

1 cucumber, thinly sliced into ribbons

Slaw

1 cup shredded carrots

1 cup shredded purple cabbage

Juice from ½ lime

2 tbsp fresh cilantro, chopped

1 tbsp olive oil

1 tbsp coconut aminos

Salt to taste

Peanut Sauce

½ cup natural creamy peanut butter

2 tbsp coconut aminos

1 tbsp maple syrup

1 tsp sriracha

1 tsp sesame oil

Juice from ½ lime

⅓-½ cup water

Directions: 

  1. In a large mixing bowl, add the ground turkey, green onion, curry paste, garlic, basil, jalapeno, ginger, curry and salt.

  2. Use your hands to combine and form into 4 evenly sized patties. Chill while you make the slaw and sauce.
  3. Combine the slaw ingredients together in a bowl until evenly coated. Set aside.
  4. In another bowl, whisk together the peanut sauce ingredients adding only ⅓ cup water and whisk until smooth. If you prefer a thinner sauce, slowly add additional water.
  5. Heat a skillet over medium heat. Add the olive oil once hot. Cook patties for 4-5 minutes on each side until the temperature reaches 165F.
  6. Assemble the burgers: Add a thick layer of peanut sauce to the bottom bun, top with cucumber ribbons, patty, slaw and top bun. Serve immediately and enjoy!
