Start your morning of right with our Blueberry Overnight Oats. Creamy oats topped with a homemade blueberry compote, offering a sweet and tangy burst in every spoonful.

Ingredients

Oatmeal

1 cup Purely Elizabeth Blueberry Walnut Superfood Oatmeal

1/4 cup greek yogurt + more for assembling

1 cup almond milk

2 Tbsp maple syrup

1 Tbsp freeze dried blueberries, crushed

Compote

1 cup fresh blueberries

1 Tbsp maple syrup

2 Tbsp water

Squeeze of lemon

Directions

  1. In a bowl, stir together the oatmeal, yogurt, milk, maple syrup and freeze dried berries. Cover and chill for at least 2 hours.
  2. To make the compote, add the blueberries, maple syrup, water and lemon juice to a small saucepan over medium heat.
  3. Simmer for 4-5 minutes and then use a potato masher to gently mash most of the blueberries. Continue to simmer for 3-4 minutes. Remove from heat and let cool.
  4. When ready to eat, layer two serving glasses with oats, compote and yogurt. Top with fresh berries and walnuts if desired.
