- In a bowl, stir together the oatmeal, yogurt, milk, maple syrup and freeze dried berries. Cover and chill for at least 2 hours.
- To make the compote, add the blueberries, maple syrup, water and lemon juice to a small saucepan over medium heat.
- Simmer for 4-5 minutes and then use a potato masher to gently mash most of the blueberries. Continue to simmer for 3-4 minutes. Remove from heat and let cool.
- When ready to eat, layer two serving glasses with oats, compote and yogurt. Top with fresh berries and walnuts if desired.
