2 1/4 cups Purely Elizabeth Superfood Oats

¾ tsp baking soda

¾ tsp baking powder

1 tsp cinnamon

1 tsp ground ginger

¼ tsp allspice

¼ tsp nutmeg

½ tsp sea salt

⅓ cup maple syrup

⅓ cup molasses

2 eggs, room temperature

1 tsp vanilla

½ cup greek yogurt

½ cup unsweetened plant-based milk

¼ cup coconut oil, melted and cooled


  1. Preheat the oven to 350 degrees F. Line a muffin tin with muffin liners; spray the inside of the liners with nonstick cooking spray to ensure the muffins do not stick.
  2. Place oats in a blender or food processor and pulse until a fine flour forms. Transfer to a medium bowl and add the baking soda, spices and salt
  3. To another medium bowl, combine the maple syrup, molasses, egg, vanilla, yogurt, milk and coconut oil and whisk until smooth.
  4. Add dry ingredients to wet ingredients and mix until just combined.
  5. Divide the batter evenly between the 12 muffin cups. Bake muffins for 15-20 minutes, or until a tester comes out clean or with just a few moist crumbs attached.
