- Preheat the oven to 350 degrees F. Line a muffin tin with muffin liners; spray the inside of the liners with nonstick cooking spray to ensure the muffins do not stick.
- Place oats in a blender or food processor and pulse until a fine flour forms. Transfer to a medium bowl and add the baking soda, spices and salt
- To another medium bowl, combine the maple syrup, molasses, egg, vanilla, yogurt, milk and coconut oil and whisk until smooth.
- Add dry ingredients to wet ingredients and mix until just combined.
- Divide the batter evenly between the 12 muffin cups. Bake muffins for 15-20 minutes, or until a tester comes out clean or with just a few moist crumbs attached.
