- In a blender, place the almond milk, yogurt, egg, maple syrup, vanilla extract, oats, baking powder, cinnamon and sea salt and blend until smooth. Transfer mixture to medium bowl and let sit for 5 minutes to thicken slightly.
- Meanwhile, set a skillet over medium heat and brush lightly with coconut oil. Using a 1 cup measuring, pour batter into the pan, leaving an inch in between pancakes. Cook pancakes for 2-3 minutes per side, or until golden brown.
- Serve pancakes with maple syrup, fresh fruit and granola!
