- Preheat oven to 350°F and grease an 8” square or 9” round pan.
- In a saucepan over medium-low heat, or in the microwave, melt the butter with the chocolate, stirring until smooth.
- Remove from the heat and stir in the sugar.
- Whisk in both eggs and the vanilla, stirring just until smooth (don’t overmix).
- Add the espresso powder (if using), flour, and salt, and stir until just combined.
- Fold in the oatmeal and chocolate chips.
- Pour the batter into your prepared pan and bake for 25 minutes or until a tester inserted in the center comes out without wet batter clinging to it—but don’t over-bake or they won’t be gooey! 8. Run a knife around the edge of the pan, then let cool fully before slicing.
