- In a medium bowl whisk together the banana and egg. Add the oats, yogurt, maple syrup, cinnamon and salt. Mix until well combined.
- Set a pan over medium heat. Evenly spread oat mixture across the surface of the pan. Leave, undisturbed for 4-5 minutes until the bottom is crispy and can be easily flipped. Once flipped, cook for 1 minute longer before breaking up the pieces.
- Turn off heat and add to a yogurt bowl and top with fresh fruit.
