- Bring a pot of water to a boil.
- Meanwhile, crush the garlic and add it to a small skillet with the olive oil. Cook until fragrant, about 2 minutes. Transfer to a blender.
- Add the kale and spinach to the boiling water, add a pinch of salt and cook just until tender, about 1-2 minutes.
- Remove the kale/spinach from the boiling water and transfer to the blender.
- Add the pasta to the boiling wa ter and cook until al dente. Reserve 1 cup of pasta water and drain pasta.
- Blend the kale, spinach and olive oil-garlic mixture until pureed. Add the lemon juice and pasta water a little bit at a time until you reach a sauce-like consistency. Season with salt and pepper if needed.
- Serve pasta with the sauce and burrata and fresh herbs.
