Ingredients

2 cloves garlic

2 cups fresh kale, packed and thick stems removed

2 cups spinach, packed

1/4 cup olive oil

2 Tbsp lemon juice

Cappello's Grain Free Fettuccine Pasta

Salt and pepper

1 burrata ball

Directions

  1. Bring a pot of water to a boil. 
  2. Meanwhile, crush the garlic and add it to a small skillet with the olive oil. Cook until fragrant, about 2 minutes. Transfer to a blender. 
  3. Add the kale and spinach to the boiling water, add a pinch of salt and cook just until tender, about 1-2 minutes. 
  4. Remove the kale/spinach from the boiling water and transfer to the blender. 
  5. Add the pasta to the boiling wa ter and cook until al dente. Reserve 1 cup of pasta water and drain pasta. 
  6. Blend the kale, spinach and olive oil-garlic mixture until pureed. Add the lemon juice and pasta water a little bit at a time until you reach a sauce-like consistency. Season with salt and pepper if needed. 
  7. Serve pasta with the sauce and burrata and fresh herbs.
