- Preheat oven to 350°F.
- For the topping, combine superfood oatmeal, gluten-free baking flour, coconut sugar, cinnamon, baking soda, and salt in a large mixing bowl. Add coconut oil and cut in with a pastry blender (or clean hands) until completely incorporated. Add ice water and mix until topping comes together in large crumbs. Chill for 10 minutes in the refrigerator.
- For the filling, combine apples, maple syrup, lemon juice, cinnamon, cloves, and salt in a large bowl. Toss to combine.
- Pour apple filling into a 9 x 13-inch baking dish. Top with chilled crumble.
- Bake apple crisp for 70 to 85 minutes, until topping is golden, juices are bubbling, and apples are tender (tent with foil partway through to prevent over-browning).
- Remove from the oven and let cool on a wire rack for 30 minutes before serving with coconut-based vanilla ice cream.
