- Place a medium skillet over medium heat. Add 1 tbsp olive oil, followed by the sprigs of thyme. Add the supremed citrus and rind and saute for 2-3 minutes to allow the citrus to release some juices. Remove citrus from pan. Set aside to cool.
- To the same pan, add the medjool dates and water. Allow dates to steam in the water for 5-6 minutes to soften without losing too much shape. Set aside.
- In a food processor, add the goat cheese, cream cheese, 2 tbsp olive oil and salt. Blend until smooth and a whipped consistency forms.
- Place whipped cheese onto a shallow bowl, creating a well in the center. Add the dates, citrus and top with marcona almonds.
- Top with additional fresh thyme and flaky salt.
- Serve with warm bread or crackers.
