- Place fresh raspberries and coconut milk in a blender and blend until smooth. Pour into a bowl.
- To the bowl add chia seeds, Purely Elizabeth oatmeal, vanilla extract, maple syrup and salt. Whisk well to distribute the chia seeds in the liquid.
- Cover and place in the refrigerator for 2 hours up to overnight. Once the chia seeds have expanded and it has thickened into a pudding consistency, it is ready to eat.
- Scoop into a bowl and top with coconut flakes and Purely Elizabeth Grain-Free Granola.
