Directions
- Add all the ingredients to a blender or food processor and blend until smooth. You may need to scrape the sides a few times.
- In a large bowl, whisk together all the cauliflower seasonings.
- Cut the cauliflower into small evenly sized pieces and toss them with the other ingredients until completely coated.
- Transfer to a baking sheet lined with parchment paper and bake for 35- 40 minutes.
- Assemble the tacos by adding a layer of black beans, cauliflower and toppings.
- Finish with romesco sauce and serve.
