Elevate your taco night with these flavorful Cauliflower Tacos. Tender roasted cauliflower, dressed in savory spices, nestled in warm corn tortillas, topped with zesty black beans, tangy pickled cabbage, and finished with a smoky romesco sauce for a delicious plant-based feast.


Romesco Sauce

4oz roasted red peppers

1/3 cup raw almonds

2 tbsp sun dried tomatoes

1 clove garlic

1/2 tsp chipotle seasoning

1/4 tsp salt

1/4 cup olive oil

Roasted Cauliflower

3 Tbsp olive oil

2 1/2 Tbsp tapioca flour

1 tsp cumin

1 tsp salt

1 tsp garlic powder

1/2 tsp onion powder

1 large head of cauliflower


Black beans, warm

Corn tortillas, warm

Lime wedges

Fresh cilantro

Pickled cabbage


  1. Add all the ingredients to a blender or food processor and blend until smooth. You may need to scrape the sides a few times.
  2. In a large bowl, whisk together all the cauliflower seasonings.
  3. Cut the cauliflower into small evenly sized pieces and toss them with the other ingredients until completely coated.
  4. Transfer to a baking sheet lined with parchment paper and bake for 35- 40 minutes.
  5. Assemble the tacos by adding a layer of black beans, cauliflower and toppings.
  6. Finish with romesco sauce and serve.
