In a large mixing bowl, add the arugula as your base.
- Prepare the vegetables and fruit: thinly slice the cucumbers, dice the avocado, peppers, peaches, shallot, and cut the grilled corn off the cob.
- Add all chopped ingredients to the bowl with the arugula and squeeze fresh lime over the salad.
- In a small bowl whisk together olive oil, sherry vinegar, Dijon mustard, salt, and pepper until well combined.
- Drizzle the dressing over the salad and toss gently to coat.
