This fresh summer salad is a simple yet flavorful dish that highlights the best of summer produce. Made with sweet peaches, grilled corn, crisp greens, and topped with a shallot vinaigrette, you’ll be serving this on repeat all summer long.

Ingredients

5 cups arugula

2 Persian cucumbers, thinly sliced

1 large avocado, peeled, pitted, and diced

1 ear of corn, grilled and kernels removed

7 mini sweet peppers, diced

2 yellow peaches (fresh or jarred), diced

1 shallot, finely chopped

Juice of 1 lime

¼ cup olive oil

2 tbsp sherry vinegar

1 tsp Dijon mustard

Salt and freshly ground black pepper, to taste

Directions: 

  1. In a large mixing bowl, add the arugula as your base.

  2. Prepare the vegetables and fruit: thinly slice the cucumbers, dice the avocado, peppers, peaches, shallot, and cut the grilled corn off the cob.
  3. Add all chopped ingredients to the bowl with the arugula and squeeze fresh lime over the salad.
  4. In a small bowl whisk together olive oil, sherry vinegar, Dijon mustard, salt, and pepper until well combined.
  5. Drizzle the dressing over the salad and toss gently to coat.
  6. Serve immediately and enjoy!
