- Preheat the grill to 425 F and brush with oil. Drizzle oil over zucchini and corn. Season with salt and pepper.
- Place the vegetables on the grill, flipping and tossing occasionally until tender. Chop the zucchini into half-inch pieces and cut the kernels off the cob.
- Assemble the salad by placing the arugula, zucchini, corn and tomatoes into a large serving bowl.
- Whisk together the dressing and toss with the salad. Sprinkle goat cheese and serve.
