One hour before beginning this recipe, add the cashews to a bowl of boiling water and let soak. Drain after one hour.
- Preheat the oven to 350 F and prepare an 8x8 inch pan with parchment paper.
- Add the granola to a food processor and blend until fine crumbles form.
- Add the crumbles to a bowl with the coconut oil and stir to combine.
- Press the mixture evenly into the bottom of the prepared pan and bake for 15 minutes.
- Meanwhile, add the filling ingredients to a high-speed blender and blend until smooth. You may want to stop and scrape the sides from time to time.

Pour the mixture over the baked crust and bake for 20-25 minutes until the center is jiggly.

Let cool before placing in the refrigerator to chill for 2 hours before serving. Enjoy!
