Key Lime Pie Bars

Ingredients

Crust:

1 Bag Purely Elizabeth Original Granola

⅓ cup coconut oil, melted

Filling:

1 cup raw cashews

1 cup coconut cream, chilled overnight

2 tbsp tapioca starch

½ cup lime juice

Zest of 2 limes

¼ cup maple syrup

Pinch sea salt

Directions: 

  1. One hour before beginning this recipe, add the cashews to a bowl of boiling water and let soak. Drain after one hour.

  2. Preheat the oven to 350 F and prepare an 8x8 inch pan with parchment paper.
  3. Add the granola to a food processor and blend until fine crumbles form.
  4. Add the crumbles to a bowl with the coconut oil and stir to combine. 
  5. Press the mixture evenly into the bottom of the prepared pan and bake for 15 minutes.
  6. Meanwhile, add the filling ingredients to a high-speed blender and blend until smooth. You may want to stop and scrape the sides from time to time.
  7. Pour the mixture over the baked crust and bake for 20-25 minutes until the center is jiggly.
  8. Let cool before placing in the refrigerator to chill for 2 hours before serving. Enjoy!
