Start your day with a delicious boost of energy with these Salted Maple Espresso Overnight Oats. This easy, make-ahead breakfast combines the rich flavors of espresso and maple with just a touch of sea salt. It's creamy, satisfying, and ready to grab and go when you are.

Ingredients

Ingredients:

2 packets Purely Maple Cinnamon Roll Protein Oatmeal

1 cup almond milk

1 tbsp chia seeds

2 tbsp maple syrup

½ cup greek yogurt

1 shot espresso

Topping:

1 tbsp coconut sugar

1 tbsp instant coffee

1 tbsp boiling water

Sea salt

Directions: 

  1. In a bowl, stir together the oats, milk, chia seeds, maple super, yogurt and espresso. Cover and chill for one hour.

  2. When ready to serve, add the coconut sugar, instant coffee and boiling water to a bowl and use a handheld mixer to whip until light and fluffy, about 3-5 minutes.
  3. Add oats to a serving glass, top with whipped coffee and sprinkle with sea salt. Enjoy!
