In a bowl, stir together the oats, milk, chia seeds, maple super, yogurt and espresso. Cover and chill for one hour.
- When ready to serve, add the coconut sugar, instant coffee and boiling water to a bowl and use a handheld mixer to whip until light and fluffy, about 3-5 minutes.
- Add oats to a serving glass, top with whipped coffee and sprinkle with sea salt. Enjoy!
