Difficulty: Medium

Meet your new holiday obsession: Pecan Pie Bark. It’s sweet, salty, and ridiculously easy to make. No rolling pins, no pie pans, just a few simple ingredients. Warning: once you break into a piece, there’s no going back.

Ingredients

1 can coconut cream

⅔ cup coconut sugar

¼ tsp salt

12oz dark chocolate chips

1 tbsp coconut oil

1 cup Purely Elizabeth Original granola

½ cup pecans

Flaky sea salt for topping

Directions:

  1. Place the coconut cream and coconut sugar into a saucepan over medium heat. Stir until it begins to simmer and then reduce the heat to low and simmer for 35-40 minutes. Stir occasionally.

  2. Remove from heat once the mixture has thickened, and then stir in the salt. Transfer to a bowl and let cool. It will thicken more as it cools.
  3. Line a baking sheet with parchment paper. Melt the chocolate and coconut oil together and stir until smooth, and then mix in the granola.
  4. Transfer the mixture to the parchment paper and spread it out into an even layer. Top with pecans and drizzle with caramel. Finish with flaky sea salt and chill for 1 hour or until chocolate has hardened. Cut into pieces and serve. Store in refrigerator.
