Leftover Cranberry Sauce Bars

Have leftover cranberry sauce from the holidays? Don’t let it go to waste, turn it into something delicious! These Cranberry Oat Bats are a sweet, tart, and have the nostalgic taste of the holidays. They’re the perfect way to give those leftovers a second life (and maybe even outshine the main event).

Ingredients

1 bag Purely Elizabeth Original Oatmeal

½ cup almond flour

½ tsp salt½ cup melted ghee or organic grass fed butter

⅓ cup coconut sugar

¼ cup maple syrup

1 ¼ cup cranberry sauce

Cranberry sauce recipe:

12oz fresh or frozen cranberries

½ cup maple syrup

⅓ cup orange juice

Zest from 1 orange

¾ cup water

Pinch salt

Directions: 

  1. If using homemade cranberry sauce, prepare the cranberry sauce first. Add all the cranberry sauce ingredients to a pot and turn on medium heat. Bring to a boil and then reduce to a simmer for 20-25 minutes until the cranberries start to burst.  Remove from heat and let cool for 5 minutes.

  2. Separate about 1 cup of PE Original Oats (140g) and place them into a blender and blend into a flour.
  3. Transfer the blended oats, remaining oats, almond flour and salt to a bowl and combine.
  4. Add in the melted ghee or butter, coconut sugar and maple syrup and stir until a dough forms.
  5. Reserve 1 cup of the dough. Press the remaining dough into the bottom of an 8x8 inch pan lined with parchment paper.
  6. Top with cranberry sauce and finish with crumbles of the reserved dough.
  7. Place in the oven and bake for 35-40 minutes.
  8. Let cool completely before cutting into bars. Serve and enjoy!
