If you could capture the taste of fall in a breakfast bowl, this would be it. These Pumpkin Spice Overnight Oats are creamy, cozy, and bursting with warm seasonal flavor. Just like your favorite pumpkin pie, but healthy enough to enjoy first thing in the morning. 

Ingredients

3 packets Purely Elizabeth Classic Cinnamon Oatmeal

¾ cup almond milk

½ cup pumpkin puree, separated

2 tbsp maple syrup

1 tsp pumpkin pie spice

½ tsp cinnamon

Pinch sea salt

⅓ cup yogurt

Directions: 

  1. In a bowl, stir together the oats, milk, ⅓ cup pumpkin, maple, spices and salt.

  2. Cover and let chill for at least 2 hours or overnight.
  3. When ready to serve, transfer to a serving glass layered with yogurt and more pumpkin puree. Enjoy!
