Ingredients

2 lbs roma tomatoes, halved and cored

½ cucumber, cored and peeled

1 red bell pepper, cored

1 shallot, skin removed

2 cloves garlic

¼ cup olive oil

2 tbsp sherry vinegar

1 tsp salt

¼ tsp pepper

½ tsp ground cumin

Toppings: Fresh herbs, chopped tomatoes, croutons

Directions
