Apple Cider Loaf Cake

With fall upon us, it feels like the perfect time to introduce a loaf cake into our baking rotation. The texture is light and has the perfect apple cider flavor. For the ultimate autumn vibe, pair it with a mug of hot apple cider.
Prep time: 10-15 minutes
Cook time: 40-45 minutes

INGREDIENTS
1 cup gluten free flour 1:1
½ cup Purely Elizabeth Superfood Oatmeal, blended
1 ½ tsp baking powder
½ tsp baking soda
¼ tsp salt
1 tsp cinnamon
¼ tsp nutmeg
½ cup greek yogurt
½ cup reduced apple cider
1 tsp vanilla extract
2 eggs, room temperature
½ cup ghee, melted
¾ cup coconut sugar
DIRECTIONS
1. Preheat the oven to 350 F and prepare a loaf pan with non-stick spray and parchment paper.
2. In a large mixing bowl, whisk together the flour, blended Purely Elizabeth Superfood Oatmeal, baking powder, baking soda, salt, and spices.
3. Add in the yogurt, apple cider, vanilla, eggs, melted ghee and coconut sugar. Whisk until no dry spots remain.
4. Transfer the batter to the prepared loaf pan and bake for 40-45 minutes and a toothpick inserted into the center comes out clean. Brush with melted ghee and top with cinnamon sugar if desired and serve.
