Made with roasted pistachios, real vanilla, and a hint of sea salt. Whether you’re craving a nourishing treat or a vibrant boost to your day, these bars deliver worthy goodness.

Ingredients

1 cup roasted pistachios

1 cup Purely Elizabeth Original Oatmeal

½ tsp salt

⅓ cup unsweetened coconut flakes

¼ cup maple syrup + more for drizzling

2 tbsp melted coconut oil

1 cup Purely Elizabeth Salted Vanilla Pistachio Granola

Directions: 

  1. Preheat the oven to 350 F and prepare an 8x8 inch baking pan with parchment paper.

  2. Place the pistachios, oatmeal, salt and coconut flakes into a food processor and blend until fine crumbles form. Add in the maple syrup and coconut oil and blend to combine.
  3. Press the mixture into an even layer in a baking pan, top with granola, drizzle with maple syrup, and bake for 10-12 minutes. 
  4. Let cool completely before cutting into bars and serving. Enjoy!
