Caramel Apple Baked Oatmeal
Gluten-Free, Vegan // Makes 6 Servings
As we head into the fall and winter seasons, baked oatmeal is one of our favorite comforting breakfast recipes to make. This Caramel Apple Baked Oatmeal recipe features a combination of warm apples, hearty oatmeal and toasted pecans. The best part? It can be made ahead of time and tastes even better when you drizzle a spoonful of rich and creamy caramel sauce over the top.
Prep time: 10 minutes
Cook time: 40 minutes

INGREDIENTS
Caramel Sauce
1/2 cup creamy almond butter
¼ cup coconut oil
1 tsp vanilla extract
1/4 cup maple syrup
pinch sea salt
Baked Oatmeal
2 eggs
1 tsp vanilla extract
¼ cup maple syrup
1 ⅔ cup nut milk of choice
1-10 oz Pouch Purely Elizabeth Apple Cinnamon Pecan Superfood Oatmeal
2 tsp baking powder
½ tsp sea salt
½ tsp ground cinnamon
⅓ cup toasted pecans, reserve a small amount for topping
1 large Fuji or Gala apple, chopped in bite-size quarters, reserve a small amount for topping
DIRECTIONS
1. Preheat the oven to 350 degrees Fahrenheit. Line a 8x8 inch baking pan with parchment paper or grease with cooking spray, oil or butter.
2. Make the caramel sauce by heating a medium saucepan over medium-low heat. Add almond butter, coconut oil, vanilla extract, maple syrup and salt to the pan. Whisk frequently until sauce comes together and begins to thicken. Remove from heat and cool. Set aside.
3. To a large bowl, whisk together the eggs, vanilla extract, maple syrup and nut milk. Add the oats, baking powder, salt, cinnamon, pecans and apples and mix well to combine.
4. Pour into the prepared baking dish. Top with remaining pecans and apples.
5. Bake for 35-45 minutes or until the edges are slightly golden brown and the center is set.
6. Let cool for 10 minutes before serving with caramel drizzle on top.
