- Preheat the oven to 350 F and prepare a loaf pan with non-stick spray and parchment paper.
- In a large mixing bowl, whisk together the flour, blended Purely Elizabeth Superfood Oatmeal, baking powder, baking soda, salt, and spices.
- Add in the yogurt, apple cider, vanilla, eggs, melted ghee and coconut sugar. Whisk until no dry spots remain.
- Transfer the batter to the prepared loaf pan and bake for 40-45 minutes and a toothpick inserted into the center comes out clean. Brush with melted ghee and top with cinnamon sugar if desired and serve.
