Apple Mojito Overnight Oats

Ingredients

2 packets Purely Apple Harvest Protein Oatmeal

1 cup almond milk

2 tsp chia seeds

3 tbsp maple syrup, separated

½ cup greek yogurt

½ lime, zested and juiced

½ green apple, chopped

Handful Mint leaves

Directions: 

  1. In a bowl, stir together the oatmeal, milk, chia seeds, and 2 tablespoons of maple syrup. Cover and chill for one hour. 

  2. In another bowl, combine the yogurt, remaining 1 tablespoon maple syrup, lime juice and zest. 
  3. In a serving glass, layer the overnight oats, chopped apple and lime yogurt. Finish with fresh mint and serve.
