In a bowl, stir together the oatmeal, milk, chia seeds, and 2 tablespoons of maple syrup. Cover and chill for one hour.
- In another bowl, combine the yogurt, remaining 1 tablespoon maple syrup, lime juice and zest.
- In a serving glass, layer the overnight oats, chopped apple and lime yogurt. Finish with fresh mint and serve.
