Start your morning with a stack of perfectly gold, fluffy pancakes topped with fresh berries, organic maple syrup, and your favorite crunchy Purely Elizabeth granola. They're so good, you'll forget they're even gluten-free!

Ingredients

1 cup gluten free flour (1:1)

¼ cup pea protein (vanilla)

2 tsp baking powder

Pinch salt

1 cup almond milk

2 eggs

2 tbsp melted ghee, more for cooking

1 tbsp maple syrup

Toppings:

fresh banana slices

Fresh blueberries

Purely Elizabeth Granola of Choice

Directions: 

  1. Prepare a skillet or pancake griddle with ghee and turn on medium heat.

  2. In a bowl, stir together the flour, protein, baking powder and salt.
  3. In another bowl, whisk together the milk, eggs, melted ghee and maple syrup.
  4. Add the wet ingredients to the dry and stir to combine. Let the batter rest for five minutes.
  5. Cook pancakes ¼ cup at a time. Makes 6 pancakes. Serve with your favorite toppings and enjoy!
